Ingredients
- 2 Quarts Water
- 2 Quarts Apple Cider
- 1 Cup Kosher Salt
- ½ Cup Brown Sugar
- 1 Bunch Thyme
- 1 Bunch Sage
- 12 Each Garlic Cloves, Smashed
- 1 Each Medium Spanish Onion, Peeled and Rough Chopped
- 3 Tbsp Black Peppercorns
- 2 Each Oranges, Halved and Juiced
- 1 Each 8 – 12 lb Turkey – Fully Thawed
Method
- Combine all ingredients except turkey in a large pot and bring to a boil.
- Remove From Heat and allow the brine to cool to room temperature.
- Place the turkey in a large tub. Pour cooled brine over the bird until it is completely submerged.
- Allow to sit in brine for 24 hours.
- Remove the bird from the brine and pat dry with paper towels.
